Food legislation came into force on 1 January 2006. The regulations require all food businesses to have a documented food safety management system based on the principles of Hazard Analysis and Critical Control Points (HACCP).
The Foods Standards Agency has developed a pack, "Safer food, better business", which is designed to help businesses with this legislative requirement. It is split into 5 sections:

Cleaning
Chilling
Cooking
Management
